To get started with these zucchini fritters, you’ll need the following ingredients:

Grate 2 zucchinis in a bowl, let them rest for 15 minutes and then push them down in a strainer, draining their juice.

Transfer them into another bowl and add the corn, garlic, shallots, basil leaves and spring onion. Season with salt, pepper, paprika and mix with a wooden spoon.

Gradually add the flour, olive oil and water. If the fritters don’t hold together, add another tablespoon of flour. Shape up the patties out of 4 heaped tablespoons of the mixture.

Heat a little oil in a large frying pan. Add the patties, slightly flatten them and cook the zucchini fritters for 4-5 minutes.

For the sauce, mix the soy yogurt with the cucumber, garlic, dill, mint leaves, olive oil and the lime juice. Season with salt and pepper.
