Dissolve the yeast in 100 ml of lukewarm water, adding 175 grams of flour in the same bowl. Stir with a wooden spoon.

Gradually add the salt and the rest of the flour, pouring in the rest of the water, olive oil and lukewarm milk. If too wet, sprinkle more flour over the dough.

Knead on a floured work surface for about 10 minutes, until smooth and elastic, adding more flour if needed. Shape the dough into a ball and place it back into the bowl, covering it with cling film. Let stand in a warm place for 2 hours, or until doubled in size.

Preheat the oven to 210 °C and turn out the dough onto a lightly floured work surface. Knead it briefly and shape it up as an oval. Use the blade of a knife to lightly score the dough, slashing the top in any pattern you prefer.
