300 ml lukewarm milk
450 g Schär Mix Pâtisserie
1 tbsp guar gum
50 g butter
2 egg yolks
60 g sugar
1 tsp salt
1 tbsp lemon peel
Filling
500 g cottage cheese or ricotta cheese
2 ml vanilla extract
50 g corn starch
2 eggs
1 tbsp lemon peel
100 g sugar
150 g raisins
To brush
1 egg
1 tbsp milk
sifted icing sugar

To get started with these little cottage cheese pies, you’ll need the following ingredients:

Combine the yeast, lukewarm milk and 100 grams of sifted flour in a large bowl. Stir with a wooden spoon and leave for 10 minutes to dissolve. Sift in the rest of the flour and guar gum, add the butter, egg yolks, sugar, salt and lemon peel. Knead the dough for about 5 minutes, adding more flour if necessary. Shape the dough into a ball, cover it and leave it to rise in a warm place for 1 hour, or until doubled.

In a separate bowl, whisk the cottage cheese with the vanilla extract, corn starch, eggs, lemon peel and sugar. Once mixed, then fold in the raisins.

Turn the dough out on a lightly floured work surface, splitting it into 2. Roll each one to a 12 x 12 inches (30 x 30 cm) square-shaped sheet. Divide the square into 4 smaller ones using a knife.

Place a full spoon of the cheese filling in the middle of the squares. Fold two of the opposite corners towards the middle of the square, pressing them together. Then fold in the 2 other corners and press well on each of the sides to make sure that they stick together.

Place the pies on a tray lined with baking paper and repeat the process for the remaining ones. Beat the egg and combine it with the milk, brushing each one with the mixture, baking them for 25 minutes at 180 °C. To serve, sprinkle icing sugar over the cottage cheese pies.
