Combine the yeast, lukewarm milk and 100 grams of sifted flour in a large bowl. Stir with a wooden spoon and leave for 10 minutes to dissolve. Sift in the rest of the flour and guar gum, add the butter, egg yolks, sugar, salt and lemon peel. Knead the dough for about 5 minutes, adding more flour if necessary. Shape the dough into a ball, cover it and leave it to rise in a warm place for 1 hour, or until doubled. |
