1st ciabatta - vegan
5 slices zucchini
1 leaf radicchio
15 g tofu cut into cubes
1/2 green pepper chopped
3 cherry tomatoes
1/2 radish chopped
2 radish leaves
2nd ciabatta
15 g cream cheese
50 g smoked salmon
1/2 cucumber cut into 4
1/4 onion julienned
mini basil leaves
3rd ciabatta
2 slices of cheese
15 g ham
15 g corn
10 g shimeji mushrooms or any other type of mushrooms

To get started with these ciabatta sandwich recipes, you’ll need the following ingredients:

Slice the 3 ciabattas on one side, opening them up. Bake 2 of them in the oven for 2-3 minutes at 160 °C. For this recipe you can either use some storebought ciabattas or our little baguettes.

While the other 2 ciabattas are heating up, toast the third one with the zucchini slices, until both of them toast up. For the first layer, place the radicchio leaf in the middle of the ciabatta, then the tofu cubes, green pepper, cherry tomatoes, radish, zucchini slices and the radish leaves.

Spread a generous layer of cream cheese on a baked ciabatta, placing the salmon sheets on the right side of it and the cucumber on the left side, topping it with the onion slices and the mini basil leaves.

Place a large or 2 smaller cheese slices on the ciabatta, spreading the ham on top of it, followed by the corn and mushrooms. Bake for another 7 minutes in the oven.
