To get started with this healthy power balls recipe, you’ll need the following ingredients:

Place the beetroot and carrots in a pan of boiling water, cover them and simmer for 20 minutes.

Combine the white beans, sesame seeds, garlic cloves, cashew, quinoa, apple cider vinegar and olive oil in a blender or food processor, blitzing them into a thick purée, pouring in more olive oil, if needed.

Remove half of the mixture and add the boiled carrot in the food processor, blitzing them until fully combined. Do the same for the other half, but using the beetroot. Transfer the mixtures on 2 plates.

Divide the parsley between each plate, seasoning them with salt and pepper, stirring gently. Wet your hands and shape up 8 balls out of each mixture, lining them up on a baking tray lined with baking paper. Bake for 20 minutes at 180 °C, allowing them to cool for a few minutes before serving.
