1 tsp ground cinnamon
1 tsp baking soda
1 tsp guar gum
1/2 nutmeg grated
100 ml sunflower oil
200 ml honey
2 tbsp water if needed
To decorate

dried blackcurrant

To get started with this gluten free gingerbread recipe, you’ll need the following ingredients:

Sift the flour, the ground cinnamon, the baking soda and guar gum. Mix with a spatula and grate the nutmeg, gradually adding the oil.

Pour in the honey and, if needed, 2 tablespoons of water. Wrap the mixture in cling film and refrigerate for 30 minutes.

Preheat the oven to 180 °C. Place the dough between two baking sheets and roll it out to a 5 mm (1/4 in) thickness. Use any cutter to shape up as many, in my case, ducks, rabbits and stars.

Transfer the different shapes into multiple baking trays lined with baking paper and bake each for 15 minutes. Serve with dried fruits and store in an airtight container.
