Some amazing gluten free Halloween cookies, that are loved by kids and adults alike! Making them is a really fun activity!

In a large bowl, combine the gluten free flour with the baking powder, sugar and salt, pouring in the water and olive oil. Start by mixing with a spoon, then start kneading the dough for about 10 minutes, until you reach a smooth texture.

Preheat the oven to 180 ℃. Break a small piece of the dough , divide it into two equal parts and start rubbing it with your palms, smoothing it up and shaping it as a ball. Press them gently with a rolling pin until you get even shapes. Spread some jam on the first one, not getting too close to the edges. Carve out different faces on the second one, placing it on top of the other. Gently glue them together by pressing the edges. (optionally, dip your fingers in water).

Bake them for 30 minutes without ventilation, and for another 5 to 10 minutes with ventilation, until crispy. Serve warm.
