Sausage Quesadilla

Melt the butter in a large frying pan, add the mushrooms, peppers and carrot. After 2 minutes, add the sausages and tomatoes, seasoning with salt and pepper. Fry for 5 minutes.

Mix the sour cream with the cheddar, mozzarella, parmesan and emmental in a bowl. Fold in the fried mixture and season with salt, pepper and paprika. Mix everything together with a wooden spoon.

Wipe the frying pan clean with kitchen paper and heat it until hot. Add the tortilla and cover one half with the mixture (2-3 tablespoons). Fold it and cook for 2 minutes on each side, until crisp and the cheese starts to melt.

Place the cubes of avocado in a shallow bowl. Gently smash them with a fork. Gently fold in the remaining ingredients, combining everything together. Squeeze the lime juice, season to taste and serve immediately with the quesadillas.
